Baked Sweet Potato With Feta Cheese and Spinach Salad

Directions


Preheat oven to 400 F Fill a measuring cup ½ full of the olive oil. Stir in the oregano and garlic and mix.


Gently drizzle the oil over the sweet potato. Keep some oil behind for topping up.


Cook the sweet potato for about 10 minutes. Remove from heat, drizzle some more olive oil, and return to the oven for another 10-15 minutes, or until soft in the middle.


Feta Salad: Mix the spinach leaves, fresh basil leaves, feta cheese, bell peppers, sun-dried tomatoes and together. Drizzle the remaining oil, garlic and oregano liquid. Toss and distribute between 4 plates. Serve a little of salad on the baked sweet potatoes and serve the remainder on the side.
