Baked Salmon With Sweet Potatoes and Vegetables

Directions


Add the salmon pieces to a deep roasting tray. Mix the sesame oil, soy sauce, lemon juice, chili, honey, 1 garlic clove chopped, and ginger in a bowl or blender.


Pour the blended liquid over the salmon pieces. Sprinkle the scallions over the salmon.


Place the tray in a preheated oven on 400 F, and bake for 20-25 minutes until the salmon is fully cooked.


In another baking tray and the sweet potato, asparagus carrot and broccoli.


Drizzle olive oil all over the vegetables and mix well along with the oregano and 2 garlic cloves chopped up. Bake also on 400 F for about 20 minutes.


Serve the salmon with the vegetables. Enjoy.
